Pese a quien le pese“ is a popular expression in Spanish that means „even if someone doesn’t like it“ or „despite someone’s objections.“ The phrase implies a defiant and determined attitude in the face of adversity or criticism.

Our Mezcal is a premium artisanal mezcal, crafted with care and sustainability at its core. Produced by small-scale agave farmers supported by Viajeros del Mezcal, this mezcal combines traditional practices with eco-friendly techniques.

  • Produced in the Miahuatlán region, a prime location far from the commercialized and lower-quality mezcal production areas of Oaxaca City.

  • We work closely with three master mezcaleros who oversee the entire production process, from agave cultivation to final distillation.

  • Their expertise ensures the mezcal maintains its artisanal standards and the quality is consistent batch after batch.

4. Agave Cultivation

  • Agaves are grown in hand-selected soil with careful attention to terrain orientation, ensuring optimal growth and flavor profiles.

  •  All farming practices are 100% organic, using cow manure fertilizer and manual weed removal with specialized tools, ensuring sustainability and environmental responsibility.

5. Traditional Manual Process

  • The mezcal production process remains completely manual, with no machines involved, from agave harvesting to distillation.

  • This labor-intensive approach retains the authentic character and smoothness that distinguishes our mezcal.

Small-Batch Artisanal Output

Monthly production ranges from 1,000 to 3,000 liters, with variations depending on the season and agave type.  

Peak season is during Spring, when production is at its highest.  

Low or no production occurs during December and the rainy season (approximately 2 months).

Jorge’s journey began over a decade ago, blending his love for travel, history, and sustainability with hands-on experience in some of the most prestigious bars and hotels around the globe. From serving as the head bartender at renowned establishments to conducting exclusive tastings aboard luxury cruise ships, Jorge has cultivated a deep understanding of spirits and the nuances that make mezcal unique.

Today, Jorge not only leads the brand „Pese A Quien Le Pese“ but also hosts an international volunteer program in his hometown, promoting sustainable mezcal production. His dedication to quality and authenticity is reflected in every bottle, ensuring that our partners and investors can trust in the integrity and excellence of our product.

The Mezcaleros We Work With.

Guadalupe Ramos (Tio Lupe) began producing mezcal at the age of 14, under the direction of his father. A decade later, he started making mezcal in his own distillery in Miahuatlán de Porfirio Díaz.

Son of Tio Lupe, Audencio started his own distillery in 2019. Working during short distilling seasons, his production is more limited and he offers a range of aromatic, artisanal mezcals.

Victor's mezcal is frequently bottled under the Mezcaloteca/Mezcalosfera label Mal Bien, and Gusto Historico. His son, Emanuel Ramos and his wife Natalia Sanchez both also produce incredible mezcal.
